How the Aillio bullet works

The Bullet is a complex roaster packed into a sleek, well-assembled box. The Aillio Bullet R1 V2 uses innovative induction heating to heat its metal roasting drum. Induction heating works by pumping an electrical current through copper coils beneath the drum, creating an alternating electromagnetic field. This alternating electromagnetic field creates so-called “eddy currents” which, in turn, encounter resistance and heat the metal drum. This highly responsive adjustable heat


All of these fancy terms essentially boil down to the fact that the Bullet coffee roaster is one of the most energy efficient coffee roasters on the market. The induction heating system allows you to provide more energy using less energy. With 97% heating efficiency, the roaster consumes less than 75% of the energy of a similarly sized gas-powered roaster, making it easier on the environment and your wallet!




Air flow

The Aillio Bullet R1 V2's unique airflow system starts by drawing cool or room temperature air through its front intake. This air is then heated beneath the drum. More cool or room temperature air is then drawn in through the rear inlet, where it mixes with warmed air from the front inlet. Air streams of different temperatures are then mixed in the drum. This mixture of cold and hot air allows you to control the temperature and roasting time with just the fan speed. While this can be difficult and not always recommended for beginners, it is a powerful tool for controlling grain temperature.



Infrared Grain Temperature Sensor (IBTS)

IBTS is one of the key components that explains why the Aillio Bullet coffee roaster is a unique, high-performance roaster. The infrared sensor helps solve one of the problems of incorrect temperature data present in other coffee roasters. Traditionally, other roasters rely on the bean probe for temperature readings, which can be very misleading since these probes often react more slowly to changes in bean temperature, are inconsistent, and are subject to change according to a variety of conditions. factors such as batch size.


The Aillio Bullet R1 V2 seeks to address these issues with IBTS. By using infrared sensors that quickly measure the temperature of the beans, this home roaster has revolutionized the quality and immediacy of the data produced. Now, roasters using Bullet can get instant temperature readings across their entire bean mass, even when using different batch sizes and roasting at different profiles and temperatures. Access to this instantaneous temperature data allows for greater consistency between toasts.

Roastime Software

Roastime, Aillio's proprietary free roast profiling software, provides a phenomenal feature for monitoring and controlling your roasts. The software works in conjunction with the RoastWorld online platform. This combination of roasting software and online platform allows you to see other users' roast profiles on the same coffee beans, user feedback, and roasting recipes.


These recipes and profiles can then be downloaded into Roastime and overlaid to mimic or edit profiles from other roasters. This ability to copy and adjust a pre-made roast profile or recipe is great for a beginning roaster who wants to learn from the wisdom of professional roasters while creating their own roasting approach. After a few months of roasting on the Aillio Bullet, you could set the standard for other roasters looking to copy your profiles!




Roasting coffee on an Aillio Bullet R1 V2

While each roaster has a different approach to bullet roasting, this brief step-by-step summary adapted from Aillio's “First Roast” guide will give you a basic understanding of what it takes to get great coffee while roasting on the Aillio Bullet R1 V2. In this example, our goal will be a light roast somewhere in the City-City+ range:


1-Prepare your Bullet by making sure the straw collector and drum are clean. Connect the main power cord, bean cooling tray (small circular plug on the side), and USB light (USB port is under the main screen).


2-[Optional] Download the free Roastime software and connect the bullet to your computer using a Micro USB cable (connected to the back of the integrated screen). This roast can also be completed manually by adjusting the power, drum speed and fan speed on the screen, but the software allows for greater use of the unique features offered by the Bullet R1 V2, such as the ability to save previous toasts, adding cup/ flavor notes for each saved roast, downloading and tweaking other users' roasts, etc.


3-Preheat the machine to 428 Fahrenheit or 220 Celsius. Using the software, simply go to “Active Roast” and set the temperature in the center drop-down bar. If using the manual option, simply adjust the preheat temperature with the +/- buttons below the Heat/Cool display and press “PRS” when the ideal preheat temperature is reached. The marker will respond by saying “Preheat” audibly over the built-in speaker. You can monitor the IBTS temperature and grain temperature (probe) in the software or on the marker screen. The marker will be announced by the speaker once preheating is complete and you can “load” (pour in the coffee beans), usually after 25 minutes or when the bean (probe) temperature rate of increase (RoR) stabilize.


4-As soon as the roaster's speaker or software alerts you that it is ready to “load” (pour the coffee beans), simply remove the silicone cap for firing the beans (located close to the screen) and place the coffee reservoir. grains into the grain sprout hole (you may need to rotate the bucket a little so it is level with the hole). Weigh your batch of grain at 350 grams (about 12 ounces) and pour it into the hopper. The roaster should automatically recognize that the beans have entered the machine and start roasting (it should announce “Roasting” through the speaker). If for some reason the Bullet doesn't automatically go into toasting mode, simply press the PRS button on the screen.


5-Now that you are officially baking, set the power level (P) to 7, fan (F) to 2 and drum speed (D) to 9 (you can switch between fan/drum speed using the “F2” button ” below the fan speed +/- button).


6-When the IBTS reading reaches 120 Celsius or 250 Fahrenheit, adjust to P7 and F3 while maintaining the same drum speed. If you have decided to use the software, now is a great time to observe rapid changes in the bean rise rate (the rate at which the temperature of the coffee bean increases) in your live roast log (accessed through “Active Roast ” section). Throughout the roast, the Rise Rate should peak and then gradually stabilize.


7-As the IBTS temperature rises to 165 Celsius or 330 Fahrenheit, reduce the power to 5. At this time, you should start to notice the coffee beginning its “yellowing” or caramelization stage. Although the glass window displays the color of the coffee well when using the free USB light, you can also use the coffee tester (wooden handle) to take out some beans for inspection. (Pro tip: Keep the taster upside down when not using and simply turn it over when using it to avoid snagging partially roasted beans). If you are roasting in software, you can mark this yellowing stage on your roast log. This will help provide more details about the different stages of coffee roasting.


8-When the IBTS temperature reaches 190 Celsius or 375 Fahrenheit, go ahead and reduce the power to 4.


9-When you reach 200 Celsius or 390 Fahrenheit, increase the fan to 4 as well. By decreasing the power and increasing the fan, the grain rising rate will decrease. This is important to avoid roasting the coffee too quickly.


10-At some point in the next few seconds you should start to hear a slight pop. This is called the first crack. If you're reading this after purchasing an Aillio Bullet, you probably already know what the first crack is. Either way, if you're using Roastime, you can go ahead and mark the start of the first crack on your roast log. This will automatically start calculating the “development” stage time, which plays a critical role in the roast profile (more on this in future posts).


11-After the coffee reaches the first crack, you can decide how dark you want the beans to be. Since we are aiming for a lighter roast (City-City+) in this example, we can “drop” (stop roasting) the beans somewhere between 45-90 seconds after the first crack begins. When you are ready to drop the coffee beans, press the PRS button to begin the cooling process and lift the glass window with the black handle to allow the coffee to fall into the bean cooler, also known as the cooling tray. (Pro tip: some beans may try to jump out of the cooling tray when dropped, we fix this, but hold roasting trays or books as shock absorbers). The cooling tray includes a powerful fan on the back that will help quickly cool the coffee, but it's also important to stir the beans so they cool faster (especially in larger batches).


12-Congratulations, you did it! Now you have top quality fresh roasted coffee! At this point, many users will weigh the roasted coffee to calculate the total weight loss for the batch. Although not necessary, weight loss can help you determine the roast level of your beans. Pre- and post-roast weights can be recorded in Roastime along with other post-roast notes such as rating, ambient humidity, ambient temperature, etc. The ability to save these notes in Roastime can be useful throughout your coffee roasting journey, as it improves consistency and quality between each roast.
